Well, mace is the outer layer covering the seed of nutmeg. Though it carries similar characteristic, it is milder and much more versatile in flavour compared to nutmeg. More like a combination of cinnamon, pepper and a more pungent version of nutmeg. Depending on which part of the world they come from the colour of spice changes. These days both red and yellow Mace is getting cultivated. In Sri Lanka, we produce the orange-red coloured verity and we are one of the top 10 contributors to the world mace export market.
