Panettone其實是介乎蛋糕與麵包之間,經長時間發酵,傳統食譜成份主要有蜂蜜、提子乾及橙皮蜜餞。它的誕生要追溯到羅馬時代,起源自米蘭,味道豐富而鬆軟。 我們為大家推介的Panettone是來自意大利佩魯賈(Perugia)的一家烘培店“Baldinucci”,他們2022同時獲取了米蘭的“最佳意大利手工Panettone”及“Umbria 最佳手工Panettone”。這是結合了多年選材及工藝的心血結晶,是非一般的商業蛋糕可以媲美。我們遠在意大利的專員,試食了十幾個Panettone後,對Baldinucci讚不絕口,簡直用相逢恨晚來形容。 Baldinucci Panettone 有多款口味選擇: 1. 經典風味Panettone 其外型已十分吸引,甜脆的岩石面造型,鋪滿杏仁,焗至金黃色的蛋糕,有著黃金比例的提子乾及及香橙蜜餞。以天然酵母發酵48小時,加上Panettone 大師Giodano Berettini 傳承數代的搓揉技巧,蛋糕充滿氣孔,拉開蛋糕像拖肥一樣柔韌。大大的氣孔能夠鎖住水份,質感濕潤,口感鬆軟柔順有彈性。一口咬下去,蛋及牛油的香氣馬上衝擊味蕾,不可不提的是Baldinucci的乾果蜜餞,可以還原到生果本身的質感,加上絲絲的蜂蜜花香及果香,層次豐富分明,不甜不膩,吃完一口,想再吃一口,停不了。蛋糕入口融化了,人滿足了。 成份:麵粉、牛油、A級蛋黃、糖、有機洋槐蜂蜜、全脂奶粉、乳化劑、天然酵母、糖漬橙皮~ 橙皮、果葡糖漿 (14%)、葡萄 (14%) 蛋糕面裝飾:糖、蛋白、米粉、杏仁、澱粉。 2. 香檳蜜桃 Panettone 成份: 麵粉、牛油、A級蛋黃、糖、有機洋槐蜂蜜、全脂奶粉、乳化劑、天然酵母、鹽、糖漬蜜桃(蜜桃、果葡糖漿)(18%)、香檳調味(糖、葡萄糖、水、調味)(3%)。 蛋糕面裝飾:糖、蛋白、米粉、調味、澱粉。 3. 無花果提子合桃 Panettone 成份:麵粉、牛油、A級蛋黃、糖、有機洋槐蜂蜜、全脂奶粉、乳化劑、天然酵母、鹽、半糖漬無花果(無花果、葡萄糖、果糖、蔗糖)(13%)、提子乾(7%)、核桃(4%) 蛋糕面裝飾:糖、蛋白、米粉、杏仁、澱粉、核桃粒。 4. 朱古力冧酒 Panettone 成份:麵粉、牛油、A級蛋黃、糖、有機洋槐蜂蜜、全脂奶粉、乳化劑、天然酵母、鹽、黑朱古力(可可塊、糖、脫脂可可粉、可可脂、大豆卵磷脂)(21%)和冧酒糖漿(酒精、水、100%純冧酒)(4%)。 5. 咖啡香料朱古力 Panettone 成份:麵粉、牛油、A級蛋黃、糖、有機洋槐蜂蜜、全脂奶粉、乳化劑、天然酵母、鹽、香料朱古力(含香料的牛奶朱古力,30%可可,糖、奶粉、可可脂、可可塊)(25%)。 蛋糕面裝飾:糖、蛋白、米粉。 6. 朱古力無花果杏仁 Panettone 成份:麵粉、牛油、A級蛋黃、糖、有機洋槐蜂蜜、全脂奶粉、乳化劑、天然酵母、鹽、半糖漬無花果(無花果、葡萄糖、果糖、蔗糖)(13%)、提子乾(7%)、核桃(4%) 蛋糕面裝飾:糖、蛋白、米粉、杏仁、澱粉、核桃粒。 7. 杏脯海鹽焦糖 Panettone 成份:麵粉、牛油、A級蛋黃、糖、有機洋槐蜂蜜、全脂奶粉、乳化劑、天然酵母、鹽、黑朱古力(可可塊、糖、脫脂可可粉、可可脂、大豆卵磷脂)(15%)、半糖漬無花果(無花果、葡萄糖、果糖、蔗糖)(8%)杏仁片(6%)、雲尼拿和肉桂調味)(6%)。 蛋糕面裝飾:糖、蛋白、米粉、杏仁、朱古力、澱粉。 獎項 2022 Umbria最佳手工Panettone 2022 米蘭Panettone日《最佳意大利手工Panettone》 2021 Panettone日Umbria最佳Panettone 2015 Panettone日Umbria最佳Panettone 致敏提醒:本產品含有麩質的穀類、蛋、奶類及奶類製品及木本堅果及堅果製品。 重量:1公斤 (6") 最佳食用期至:2026年1月尾 產地:意大利佩魯賈 Baldinucci The unique ingredients, the slow processing, attention to detail and the processes born from passion and craftsmanship.
